The bitterness in the apricot seed indicates the amount of B17 content it contains. Sweet seeds contain little to no B17 whereas bitter seeds contain the most. California-grown apricot seeds have been shown to contain the most B17 potency over other varieties grown around the world, hence they are the most bitter.
